Esencia Divina

Grapes for this wine come from contracted fruit grown in vineyards located in the Val de Salnús sub-region of Rías Baixas. The growers follow the winery's technical department instructions to care for the plots of land. The grapes were selected by quality criteria, such as ripening and degree, and hand harvested, cluster sorted and underwent cool maceration (46 to 50°F)for between four and six hours as whole clusters. The grapes were then pressed in a pneumatic press at a moderate pressure to obtain the most aromatic portion of the must. Then, fermentation occurred in stainless steel tanks under controlled temperature (64°F).
